In addition to pepper, another important element contributed to Phu Quoc economy is fish sauce (“nuoc mam”). This production is well-known for excellent quality and is exported to many countries in the world. Fish sauce is a sauce to add salty flavor for meals Vietnam. Fish sauce is made by combination of a fish called anchovies, salt, water and sometimes local pepper; fermented through many stages for period of 6 months to 1 year. Then it is drained from big barrels to many small grades and divided into 2 types: high-quality lighter coloured sauce and basic cooking sauce; both have high level of protein.
Fish sauce factories are distributed in Duong Dong town and An Thoi town along river. When visiting factory, you is told a story about fish sauce production process and have a look at a storage containing large vats from which the sauce flow into smaller one and then plastic containers to bottling process. Some factories open a shop to sell their products.
